Walleye fillets coated with potato flakes seasoned with paprika, garlic and onion powder and lightly fried offers a tasty alternative to your classic bread crumb crust.
SERVES: 6
PREP TIME: 15 Minutes
COOK TIME: 5 Minutes
Ingredients

2/3 cup all-purpose flour
1 tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. onion powder
2 eggs, beaten
2 cups instant potato buds or flakes
2 tablespoons vegetable oil
2 to 2-1/4 pounds Walleye fillets, skin removed
Lemon wedges
Tartar sauce

Directions
Step 1  Step 1:
Combine flour, paprika, salt, pepper, garlic powder and onion powder in shallow dish. Beat eggs in a separate mixing bowl; set aside. Place potato buds in second shallow dish.
 
Step 2  Step 2:
Coat fillets first with flour mixture, then dip in eggs, and then roll in potato buds to coat.
 
Step 3  Step 3:
Heat oil in large skillet over medium heat. Add fillets. Fry for 4-1/2 minutes, or until golden brown, turning over once. Drain on paper-towel lined plate. Serve with lemon wedges and tartar sauce if desired.
 

Serving Suggestion: Serve fillets with asparagus spears topped with melted butter or hollandaise sauce.
